Pizzelle

These Italian treats from Abruzzo are made of flour, butter, milk, eggs, sugar and some flavouring of choice - anise or vanilla or lemon zest/vanilla or cocoa powder/vanilla are some popular ones. They are cooked on a flat iron that has the pattern etched in it. Right on the cooktop. The batter makes a mess so cover the area around burner with foil for easier cleaning. They should come out nice and crisp. They are called pizzelle, ferratelle, or neole. Lovely with a cuppa or to sandwich some ice cream. 

Our iron is a simple manual one but electric varieties are available at Italian alimentari or cooking supply importers.
