Horseradish Anyone?

A few years ago I planted some horseradish, which I've used a few times for the usual purposes, but now it's taking over. I can't dig it out without using it (that'd be wasteful) so if anyone has any interesting ideas for recipes I'd be happy to hear them.

I love horseradish strong and pungent so have only really used it fresh so as not to lose its heat.

I've used the leaves when young as a spicy cabbage alternative or in chutneys, but these are too old now.
