Salmon Croquettes

Air fried salmon croquettes with tomato and cilantro, carrot salad, and jollof quinoa. Wine: Spier Seaward Stellenbosch Chenin Blanc 2021.

This turned out to be an excellent last minute stare-at-the-pantry dinner. I had been thinking of making veal saltimbocca, but I could not find veal anywhere (the grocery store I typically get it from has apparently stopped carrying it, and other avenues were not fruitful).
