Kayaking through the mangroves

Saturday October 22
After a delicious breakfast of Dutch Baby pancakes, with berries, prepared by Jen, the four of us went on a guided kayak through the mangroves and round the edge of the bay, down on Lido Key, further south along the string of barrier islands. There were two other couples with us on the kayak trip, and our guide was very informative and humorous. The downside of being on a guided tour, is that we didn’t see much bird life, since he was talking most of the time. In the afternoon, we went down to the beach for a couple of hours. Jen and Laura prepared a very tasty dinner, with linguine and vegetables and cheese, accompanied by some shrimp and scallops. Philip came and joined us later in the evening, once he’d got off work. He will be with us all tomorrow, but has to return home tomorrow evening, as he has classes Monday morning - he’s training to be a physical therapy assistant.
Since we are going to be out most of tomorrow, and then eating out in the evening, the consensus was to start my birthday cake, made by Laura, this evening. Since we all flew here, it was made quickly this morning and frosted this evening, so it didn’t have fancy decorations, but it still tasted delicious! ( see extra)
