While visiting Santiago de Compostela on a very wet day in September, I bought a box of Pasta de Almendra. 

These traditional almond biscuits are crunchy and extremely delicious, made by beating egg whites to a stiff peak, then adding sugar, egg yolks and ground almonds. The recipe sounds easy and I intend baking them.

Sadly, these are the remaining three - and they won’t last long!
