Coconut chia for brunch

I made some more coconut cream yesterday (from a 69p brown coconut) - heaven.

I used some in a curry, and some in this pudding with chai seeds. It sits on top of a layer of candied pecans, and that sits on top of a puree of papaya and lime.

After that I felt fighting fit and went up to the farm to tend the veg patch and say hello to the pigs.
