Saint-Hilaire

Imagine ...a day focused on champagne! 

We have been to Saint-Hilaire other years but it still inspires...Saint-Hilaire where the monks accidentally discovered bubbly wine..the area now famous for its Blanquette de Limoux..the ancestor of present day champagne...

It was a cold and rainy day, so we spent most of our day in the abbey, huddled around the cloister trying to capture an image on paper that would remind us of our visit. Despite the weather, we managed to at least get a sketch done..and enjoyed the scenic drive to and from the village  - this is vineyard country (extra)...so the scenery was worth the drive! 
 just around the corner... and a tasting of the different variations of their famous wine..  (extra)

Dinner? Of course, I must report dinner... it is always a big highlight of the day..Being Tuesday, dinner was at La Ciboulette, our favourite local fish restaurant..and it was delicious as usual...
