Lobster Soufflé

Lobster soufflé, boiled and herbed potatoes, salad, and cheddar. Champagne: Michel Arnould et Fils Grand Cru Extra Brut.

Turkey is traditional for Thanksgiving, but I seldom make it when it's just the two of us. I like to consider it a foodie holiday (as opposed to the commemoration of a silly patriotic fable), and I use it as an excuse to spend some extra time in the kitchen making something more involved. I'm surprised that I have never attempted a soufflé before now.
