Corned beef hash used to be a staple dish when the children were young, a real store cupboard go to. We haven’t had it for a long, long time, although there is always a tin of corned beef in the cupboard and occasionally Gordon uses one to make a pie. I wonder how many people have tins in their cupboards from lockdown times when we were stockpiling stuff in case we couldn’t go shopping!

Anyway, this evening Gordon was going to Carlisle for the football and he suggested we eat at lunchtime and he would make corned beef hash. He had found Felicity Cloake’s recipe and decided to follow that. Felicity Cloake appears every Saturday in the Feast supplement that comes with the Guardian. She takes a recipe and provides an ‘ultimate’ version which she has arrived at after lots of research. She’s been doing this for a long time and I have collected these and filed them away. Now we are gradually trying them . . . and they work!

This worked. At least half as much corned beef as we would have used in the past, which is the way we are going nowadays and other things added. Delicious! I hope Carlisle are as successful tonight as this recipe was.
