Orkney cheese
The cheese has had its final pressing at 10kg and is now ready to ripen and form a dry crust. As you see it’s very shallow! I didn’t start with enough milk to fill the mould…next time!
It should be ready to eat in about 5 days, so I will monitor its progress, as we done want it to get too dry.
I noticed the first Oriental Poppy in flower today!
