Trout

The trouble with six trout is that my smoker is broken so you can maybe two fillets on the barbecue. Six trout, 12 fillets, let's say a couple of hours per pair, 12 hours. No. So, Phil got sent away with one of them, the neighbour across the way is getting two. I charred these two for dinner leaving me with just two fillets floating in a briney, garlicky, chilli bath to get smoked tomorrow.
