Crumbly fudge 

Has to be very hot 

So hot it gives your fingers blisters if you touch it 

Also. To make it crumbly you have to whisk it with AN ELECTRIC whisk 

Electric whisk + boiling sugar = recipe for disaster 

I went to it with great trepidation ....

Pan is very heavy.  Started slow on whisk.  Increased it.  Increased it a bit more 

Absolutely terrified 

Once whipped it was overly heavy  had to pick up the bowl Twice as heavy ...  And pour /scrape into tray 

I yowled a lot.  Si offered to help. I was determined to achieve it myself 

And I did !
