Different . . .
Bacalhau is not something I'll ever see in a food store at home. It's dried salted cod and is a traditional Portuguese food treated this way from before refrigeration became available.
Already a strongly flavored fish (and strongly smelling I have to say) the preservation process intensifies the flavour while allowing it to be prepared in several different ways. Although I won't get the chance to cook it myself, I'll be looking out for it on menus over the coming days. I'm intrigued!
