Sunshine pie

Lucy made sunshine pie today. So called because the vegetables and chorizo whilst being stir fried to go in the pie are the colour of sunshine ! A light roux sauce coats the vegetables and placed inside a pie dish lined with filo pastry. Once baked and brought out of the oven we decided it made a lovely still life with a background of autumnal fruit and a nice glass of red!
