The Quest for Quince Quisine

Tonight, a tagine of lamb with quince (but without the tagine - somehow "a pressure cooker of lamb with quince" doesn't sound so appetising!). There were also vast hordes of carrot, fennel, celery, mushrooms, onion and garlic, but they seemed to shrink in the cooking! I added honey to sweeten the quince, and there were typical spices such as turmeric, cayenne, cinnamon and ginger. It was very good, if I say it myself. The quest for quince recipes continues....!
