Leek & Cheese-encrusted Shepherds' Pie

Today's the day ........................... to defrost

I don't think we ever fully acknowledge the modern day benefit of having a deep freeze.

This Shepherds' Pie was made using the leftover lamb from our Christmas dinner which has been in the deep freeze since then. I defrosted it overnight - and it was good as new. Tasted good too.

What would they have done with leftover lamb in Downton Abbey days ..................?
