Sleeping In

One of the treats I remember as a kid were the home made dill pickles my Grandmother put up in big glass Mason jars. In the fall too, there were jars of apple sauce and pickled beets. Yeah, I know-its an acquired taste.

Lawrence University contracts their food service to a company appropriately named Bon Appetite. All the ingredients in the school cafeteria are harvested from local farms.

Part of Bon Appetite's collaboration with the University is a student run garden. Everything leftover from the kitchens is composted and used to fertilize this small plot along the Fox River.

I see rows of tomatoes, beans, and squash all tucked in beneath their blankets of snow.
