Avocadopasta.

Avocadopasta has been here in Finland for over a year, a food that everyone must have heard about.
The recipe is Alexander Gullichsen's. He made it for her wife and it was so good, that she almost started to cry.
Whole Finland has been cooking this food so industriously, that the ingredients have been sold out many times from part of stores.
I haven't been so interested of this fuss, because I don't like much avocados.

But today I made it and it was good! (I didn't use the pecorino cheese because the market didn't have it.) Otto was suspicious of me making the food, because he loves to cook and makes 97% of our meals. But he liked it too even tough he was not home lurking me and telling all the time what to do, which is btw very annoying because I know how to cook too :)

For 4 people

1 garlic clove
½ chili (remove the seeds)
1 lime
2 ripe avocados
salt
black pepper
about ½ dl good quality olive oil
handful of parsley
handful of basil
30 g pecorino cheese
30 g parmesan cheese
400 - 500 g spaghetti

Cook the pasta al dente.
You can make the sauce directly in the serving dish. Dice the garlic and chili in the bowl. Squeeze the lime juice. Cut the avocados and remove the stones. Dice the avocado in its shell and carve with a spoon. Chop the herbs and grate the cheese.
Add salt, pepper, oil, herbs and cheeses. Mix with a spoon. Taste! You need enough salt in your sauce or it will be flavorless.
Add some of the water you used for boiling the pasta in the sauce and mix the pasta with the sauce. Sprinkle with grated cheese and grind some pepper on top. Serve immediately.
