Some time ago we made the decision to try to reduce what we throw away and certainly to minimise the amount of food that goes to waste. I find it hard to cook for one or two, so we often have things lurking in the fridge. Ant's particularly good at checking for odd bits lurking at the back.

This is risotto from a couple of days ago, mixed with eggs and cheese. You can bake it in the oven or as her, cook it a bit like a tortilla in a pan on the stove, finished under the grill.

There's some dispute about its name. I call it fritatta, others disagree.

In other news a ton of paperwork that came out of yesterday's meetings. Again!
