To Make Elderflower Champagne

There will have been a rush this week to make all sorts of beverages with elderflowers as an ingredient.

The elderflowers are just coming to an end and I find that this is the best time to use them for wine making.

This is because the little white flowers can be easily separated from their green backing stalks. It is the flower heads that are needed.

I got one gallon started a couple of days ago and this is the glass container containing the turgid yellow liquid.

The other main ingredient is white grape juice and I regret to say that at this time of year I have to buy it in from the supermarket because my grapes are not yet ripe.

There is one thing to look out for when making anything from elderflowers and that is to process them in the shortest possible time because they very quickly take on an "off" flavour of cats.

So this lot is destined to become elderflower champagne.
