"Biznaga"

If you have ever visited Malaga city at this time of year you will definitely been approached to by a street seller to buy a biznaga malaguenas.
The biznaga is a tradition unique to Malaga they are basically handcrafted "flowers" of jasmine. The biznaga is created from two components, the frame is actually a dried thistle, picked much earlier in the year, which has a large number of very narrow spikes coming out of its head, Once the thistle has dried out it is stripped back so that only the skeletal structure remains.
The biznaga itself is formed from fresh jasmine which is picked very early in the morning before the flower has opened. The jasmine buds are then slipped onto each individual spike, and when the flowers, they form a ball of jasmine exploding from the thistle stem.
