Caramelised beetroot and red onion tarte tatin

After a late night out, and suffering from a complete inability to resist the temptations placed before me by one Matt (in the form of tequila shots), today started slowly. I still got up early, but just didn't actually manage to do much with the time ... Finally decided I needed to do something with some beetroot, and the result is this delicious (sorry it's not a great shot) beetroot tart. I had a slice for dinner topped with a dollop of sour cream. Instead of puff pastry I used the tried and trusted Maggie Bear sour cream pastry again (and am now wondering what to do with the other half of the pastry that is still resting in my fridge).
