Aspergillus Niger

Aspergillus, first catalogued in 1729 by the Italian priest and biologist Pier Antonio Micheli, found in Lemonzest's kitchen today.

But the good news is:
The enzyme Protease is derived from Aspergillus niger to produce the additive Clarity-Ferm, used in the brewing industry to reduce gluten content of wheat and barley based beers.

The offending item is however residing in our compost facility.
