Calcutta (Curry) Night!

I was looking through other Blip Journals and saw Life of Tiree's post yesterday.

Boy, did it make me hungry!

Tonight's dinner is inspired by that little shallot (thank you!), and by the mention of curry and lime.

I didn't follow her recipe link, just tossed things into the pan as I hummed... I had about a fourth of a jar of Calcutta Curry in my cupboard, and so I used all of that (as I like to say, If you're gonna burn, baby, you might as well blaze).

There was also some fragrant lemongrass (such a nice brightening boost), and lovely pink peppercorns in the spice drawer.
