It was the last day of my holiday vacation before going back to work, and I thought we needed something fun to eat, so I made lasagna.
What a simple but tasty treat: lasagna noodles (the kind you don't have to cook in advance) between layers of cheeses and tomato sauce. Making the layers is almost a zen-like task: lasagna, cheese, sauce; lasagna, cheese, sauce.
Cheeses include parmesan, romano, asiago, mozzarella, provolone, and fontina.
I include meatballs when we have them, but we didn't have any, so it turns out quite by accident that this is a vegetarian lasagna.
My favorite part: the oceans and oceans of golden melted cheese on top!
