Postprandial Inspiration

Having done my blip in the morning yesterday, I decided to take a little time after lunch, when Phil and I are in the habit of having a leisurely cup of tea, to take a closer look at another of my favorite Christmas presents.

Among the gifts my daughter gave me was Nigella Lawson's most recent cookbook, Nigella Kitchen: Recipes from the Heart of the Home, to add to my collection of her earlier works. (M and her brother, W, join me in relishing Lawson's prose as much, if not more, than her recipes, and all of us have collections of her works.) I'd taken a delighted quick glance at the book when I opened my gift on Boxing Day, but had not yet had time to peruse it thoroughly.

I meant to spend 15 or 20 minutes leafing through Kitchen while I drank my tea, but an hour later, I realized that I had once again lost myself in a book. The only cure possible was to get up and make something! Given the supplies at hand and the deep love that Phil and I share for marmalade, this Marmalade Pudding Cake was the obvious choice.

With a cup of marmalade, half a pound of butter, and four eggs among the ingredients, it's rich, yet surprisingly light. We each had a slice last night after supper, and I've frozen half of it for later consumption. I think it will be lovely with tea after lunch today!

(And yes, I know that in yesterday's blip I wrote that posting my entry so early meant that I could then "turn my undivided attention to meeting notes, thank you notes, and boring but necessary financial paperwork." I would like to reassure you that I did quite a lot in those arenas also, although there is still a little more to be done today...)
