Pickled eggs!

I have been tending a bakers dozen of eggs in the fridge for a week or so with the intention of pickling them for Mr PB and the boys. I discovered last year that you cannot peel very fresh eggs and have to leave them for a week or so. This enables the membrane to form and peeling so much easier.

Also when I have a glut of eggs I make lemon curd (yummy). Love the lemon curd, not so keen on the pickled eggs - but everyone else devours them!
