Banana Muffins!

Depending on your source, there are between 20 and 50 different types of bananas grown in Thailand. I only know them by their shape and size... the long skinny ones, the finger-like ones, the ones that smell good, the short stubby ones, etc.

We used short stubby bananas for these muffins. The type of banana actually does change the texture and banana taste a bit, but not much. Our bananas didn't mush as well as some, leaving us with soft banana chunks in the muffins...a good problem.

Not too long after they came out of the oven, they were all gone. :)
