Last of the Lemons

The last of this year's lemons are destined to bring their sunshine to dishes far into the future.  The last couple dozen lemons were jarred-up with salt, red peppers, black peppercorns, and a sprig or two of thyme to become delicious preserved lemons over the next few months.  I can't wait!
