People of El Carrizal grow their own corn and put it onto the rooftops to dry. When sufficiently dry, they remove the kernals and store them for future grinding and making into masa for tortillas. 
A few of us were walking up the dirt road, these friendly folks  waved us over, we had a nice chat, and they said, "come back again!"
