Concentration was king at a chefs competition at the Hostex food and hospitality show in Midrand today. Good to see innovation among local entrepreneurs, with offers ranging from salmon grown in Lesotho's clean waters, to salt from ancient deposits in the Kalahari desert, toffee from the Karoo, and craft gin crafted in Cape Town.
