Chinese Takeout, Homemade Sides

Spicy chicken with brown rice (chinese takeout), with homemade bok choy kimchi, cucumber tsukemono, and blistered shashito peppers.

This is a bit of a cultural hodgepodge (chinese, korean, and japanese), but mostly good. The only thing that didn’t work out was the kimchi, which came out much too salty—I’ll adjust accordingly the next time I attempt it.
