Not just any omelette - a Vegan omelette :)

Bet this fooled you - yes it’s made of tofu... with a spicy mushroom and red pepper filling. Not bad for my first attempt.

Next time with the addition of black salt (“Kala Namak”), awaited from Amazon, which will apparently add an eggy aroma.

So easy to make. If you knew, you’d realise it was eggless. But I bet if you didn’t, you wouldn’t..

NB I used unsweetened almond milk, and needed about 3 tablespoons (rather than just one in the recipe)
