Dehydrating apples

An afternoon of preserving. In an attempt to deal with the ever mounting windfalls we bought a dehydrator which is sitting in the conservatory whirring away drying five trays of apple pieces.

While that was going on, 2lbs of sliced cucumbers and a couple of thinly sliced onions were sitting in salt to draw out water. Later that lot was cooked with a sliced red pepper in cider vinegar, various spices, brown sugar and the secret ingredient; the vinegar from a jar of gherkins to make sweet cucumber pickle.

Almost finally, more apples were prepared and stewed ready for freezing and finally, the apple juice that had been cooling and clearing overnight was bottled and put in the freezer.
