Not Demerara!

I made two gingerbreads this morning, one for the freezer and one for the Tuesday tea party - it needs time to mature. It is an old recipe of my mother’s and it is supposed to have those lovely big seeded raisins that you don’t see nowadays.
It also contains Demerara sugar, that lovely golden sugar with large crunchy crystals. Such a disappointment to find that Tesco “Demerara sugar” looks more like golden granulated. It has never been anywhere near the town of Demerara in South America, but is made from British sugar beet flavoured with molasses. Not the same thing at all!
