Pizzelle iron

This is a stove-top iron for making pizzelle. A pizzelle is a thin, crisp wafer, commonly flavoured with anise seeds. Sometimes we flavour them with lemon zest. Nice with a cup of coffee or tea or to have with a scoop of ice cream. Some people make savoury ones instead of sweet. These pair well with cheese and a cold drink of choice. There are a few different names for the wafer depending on where you are in Italy. I have also heard them called ferratelle and neole. This iron is from my maternal grandfather’s village in the Abruzzo region. Abruzzo claims the pizzelle as theirs but they can be found all over Italy. The patterns on the irons vary greatly. Eventually we will make some pizzelle and I will post a photo.
