Next, peaches...

The nectarines have come and gone, and delicious as they were, we had quite a small crop this Summer.
Peaches were the next to ripen, and not only do they taste good, there are lots of them, with most branches sagging under their weight.
Only downside is that either a possum or a very strong rattus rattus has torn a hole in the nylon bird-netting (which is as tough as...well, nylon bird-netting), and gone on a feeding frenzy inside.
The usual story: one or two bites out of a peach before it moves on to the  next; and repeat. Whatever sort of beast s/he is, it has the manners of a...well, possum or rat.
Found a fabulous recipe for the apricots (baked, with rosemary, orange and vanilla - unusual combination, but quick and easy, and definitely made in heaven); which we're now going to try with peaches.

Very much doubt you'd regret trying it - especially if you use a real vanilla pod!
