Apricot and sultana cookies

A new recipe for something different. I've been steering clear of all things sweet for the last six months but I miss a sweet treat with my early evening cuppa after dinner, although I'm happy not to have anything sweet all day. I'd not made these before, and as with most recipes I make these days, I always reduce the amount of sugar in the recipe and hope it doesn't spoil the end result. It didn't in this case and I think I will probably reduce it even further when I make another batch. Maybe I've just got used to less sugar. I've tried using 'alternative pretend' sugar but that nearly always gives a pretend taste to go with it! I baked them in two batches, one a little longer than the other, another trial. Half were more biscuit like the other a bit softer and more cookie like. I was good and only ate one of the softer ones but Barry said the biscuit type was good too, win win!!
Apart from baking I ordered some compost from a local supplier. A lovely man delivered it just two hours later, 10 x 80 litre bags at just £6 a bag and free delivery; can't beat that for service. I spent some time in the new poly tunnel, a bit of organising ready to start planting when my seeds arrive. We are forecast snow on Friday/Saturday so I'm hoping that will be the last and short lived!
I also completed the online forms to get the physio sorted for my leg so hopefully I'll hear from them soon, as it's flared up again after I thought it had started to heal itself.
Mum wasn't  feeling on top of the world today so a bit of chivvying was required a few times during the day. I think I'll try and chivvy up the viewing today or at least get a date for her which might help. She was so buoyant about it all and now has gone very flat. She just wants to feel well and I think much of that will come from being able to relax and enjoy her new home and hopefully soon be able to see more people. She perks up no end as conversation goes on.
I have plans to finally start those girls' skirts tomorrow. Unfortunately sometimes the best laid plans.........
