One of my favourite, quick n' dirty, throw it together, guilty pleasure, dinners...

Okonomiyaki is like a Japanese 'pancake' that basically translates as 'whatever you like, fried'. There are different versions in different regions, and this one I found in Tim Anderson's cookbook is a rice based version (they are usually shredded cabbage as a base). His version has the likes of spring onions and prawns and (perhaps bizarrely) mozzarella (cheese really really works), under a bacon or ham top, cooked and turned in a pan on the stove. All with a kewpie mayo, Bulldog sauce, and bonito flakes covering.

Chucked in some sesame seeds, some Gochujang, didn't have any mozzarella, so there was halloumi and a wee bit of cheddar, french beans from the garden, and I've started topping it with a fried egg as well.

It ain't healthy, it ain't refined, but by jove does it taste nice, and all done in about 20-25 minutes.
