Mediterranean Cheese

I was on a bus soon after 9am this morning on my way into central Auckland. The beaches along Tamaki Drive were already busy with people enjoying the sunshine, having picnics and swimming.  I arrived at my destination soon after 10am - Main Course, where I had come to take part in a Mediterranean Cheese Making Course. In the space of just over two hours we learned how to make halloumi, feta and ricotta cheese.  We were each given a cheese making kit, as well as the cheese we had prepared.  The tutor prepared bruschetta with halloumi he had made, then grilled, topped with a mix of tomato, red onion and capers dressed with vinaigrette - delicious.

There are 8,810 new community cases today, with 690 people in hospital, including 26 people in intensive care. There have been another 18 deaths, bringing the nationwide death toll up to 396.
