Nut Roast

Yet another blustery, wet, day when we didn't venture further than  the local supermarket. In the afternoon I made this pine nut roast for the non- meat eaters to enjoy on  Christmas day. It has a stuffing of watercress, red pepper and mushroom, and is quite time consuming  to prepare, so I rarely make it. It has now been frozen.
