Ginger and White Chocolate Cheesecake

Bathroom Chris arrived at 9 today and got more tiling done, the trim on and the shower tray in place. He’s having to go to another job on Tuesday and Wednesday but will be here tomorrow, Thursday and Friday. He thinks it’ll still not be done by then as there are lots of fiddly bit to see to.

I made more stuff for tonight - Melanzane alla Parmigiana which worked out well.

Then I had a 10 minute walk but it’s a struggle to keep moving.

I finished the Vienna book so when there’s a Blurb offer on I’ll upload it. I’ll get one for Jenny too, for her birthday.

We had a lovely evening with our friends though I was very tired. I managed to get the soup turned round by adding lime juice which reduced the coconut flavour and a drizzled some chilli oil on top.

The aubergine dish was all eaten. We had it with salad, potatoes and feta, pistachio and pomegranate bake. Everyone was very complimentary. I thought I had over-catered but no!

This is the ginger and white chocolate cheesecake. I was glad to be able to entertain these kind friends (Katy and Colin, Phil and Carol, Chris and Ailie), who fed us when the house was in such a mess.
