Jumping on the Band Wagon

This image reminds me of the last time I was in Essex and my snobby friend was lamenting the lack of culture in the county.
"I bet they don't even know who John Constable was" she said.

"Actually, I think they do" I replied. " Why only last week when I was in a bar, I heard a young girl shout to the barman:

'Hey Wayne, get us a Tequilla Sunrise' "

I hear Jamie Oliver is jumping on my 'Eat Well for Less' band wagon by publishing a new book "Save with Jamie"


Maybe the Nation's blue eyed boy can cook , but I'm not so sure about his maths.

On Woman's Hour yesterday (on Radio 4, so it must be true.) Jamie said he could feed a family of 4 well for £45.00 per week.
The recipe he rustled up on the programme cost £1.72 per portion.
£1.72 x 4 = £6.88 for the main course for 4.
That is quite a lot over his budget for the week before he thinks about puddings, breakfast and the odd lunch and snack.

Today's offering for the 'Eat well for £20 per week' is a recipe that relies on the glut of courgettes always available at this time of year.

Courgette Tian
Ingredients:
1 or 2 courgettes
About 8 oz weight of cooked rice
Grated cheese - some mousetrap or something lurking in the fridge + a bit of parmesan (it really is better to use something past its best!!)
1 egg, beaten
Butter for greasing the dish
1 clove garlic.

A shallow oven proof dish

Method:
Grate 1 or 2 courgettes on the large side of a cheese grater. Leave to drain in a colander for a few minutes.

1. Chop the clove of garlic in half and rub it over the inside of the dish (Traditionally the dish - made of earthenware used is called a Tian - hence the name of the recipe.)

2. Spread a small amount of butter over the dish.

3. Put the cooked rice, and most of the grated cheese in the dish, mix well.
4. Squeeze the excess juice from the grated courgette and add to the mixture.
5. Add the beaten egg and plenty of seasoning (salt, pepper, nutmeg, the remains of the garlic bulb- crushed - if you like)
6. Mix it all up well, flatten it in the dish and sprinkle the rest of cheese over the top.

Bake in a pre-heated over at 200 deg C for about 30 mins.
Serve with a green salad.

A great vegetarian dish that can have lardons, diced bacon, ham or cooked chicken added to it before cooking if desired. (I prefer not to as it spoils the delicate flavour of the courgettes!!)
Serves 4

Cost:
Cooked rice - about 25p
Cheese: Depending on what you use £1.00
1 egg 20p
1 or 2 courgettes (if bought) 30p
Salad £1.00
Total £2.75 for 4 portions. (Although it may only serve 2 as it's very more-ish)
