Nero, The Emperor Of Cabbages

I went to Waitrose last evening to get some items I can't get locally. I wish there was a store nearer to me.

I got some fresh horseradish, which we love and this beautiful cavolo nero. I adore all the cabbage family and have been buying lots of lovely British Savoy lately for its gorgeous crinkly texture and nutty flavour. The texture of this black cabbage is like a Savoy on steroids. I love the look of it. Shame it was grown in Spain.

It cooks to an intense dark green, tastes tangy and bittersweet and is a great source of lutein, vitamins K, A and C as well as significant amounts of manganese, copper, fibre, calcium, iron, the B vitamins and many other elements.
