Lentil Curry

I made this lentil curry yesterday and I love it. I love any beans or bean-like veggies and lentils have the same powdery taste. It was really easy to make too.

Lentil Curry (vegetarian)

Ingredients:
125 g red lentils
a couple of spring onions
2 cloves of garlic
1 small red bell pepper
2 tbsp arachide oil
1 tsp garam masala
1 tsp kurkuma
1 tsp grinded cumin
(or replace the above three by 3 tsp of curry mix and a bit of cinnamon)
salt, pepper

* cook the lentils in a covered pan in approx 250 ml water with salt and pepper for approx 10 min (check that it does not cook dry)
* cut the spring onions in fine diagonal rings, chop the garlic, cut the pepper in small slices
* heat the oil in a wok, add the spring onions, garlic an d pepper and fry in 2 min while stirring
* add the herbs and simmer for a bit. Add the boiled lentils with the cooking fluids. Mix all and serve hot :)


The recipe said to serve with yoghurt, I served it with basmati rice.
