Life's Little Moments

Bedraggled Chippie

It was way to wet out to more than a very fast sortie to the deck. Stuck the D600 under a plastic bag, ran out, snapped off a handful of shots, back in. In truth, I was glad to get some good shots of the chipping sparrows - they are adorable little birds, and have only recently returned to our area for the summer.

I did see the oriole again this morning, but haven't seen her again today (which could mean she's moved on, or that I just haven't glanced out at the right time.) And still no hummingbirds ...

Since the weather is so crummy, I spent the day sorting and packing Christmas decorations. The cats have been keeping me company - they always love a good box and some crinkly paper. Little do they know what is ahead for them... Cats don't particularly like change, so moving will probably be pretty traumatic for them both. They've only ever lived here, so it will be new adventures for us all.

Off to do a bit more packing - then into the kitchen to make chili with sweet potatoes (Paleo Chili - really delicious and easy!) Recipe pasted below if anyone wants to try it.

Thank you for all the lovely comments, stars and hearts on my oriole yesterday - I'm glad that you liked her as much as I did. Maybe I'll get lucky and see a male in the yard this year - they are extraordinary.

Cheers, and Happy Hump Day!

Paleo Chili

1 pound ground beef
1/2 yellow onion, chopped
1/2 red bell pepper, chopped
2 medium sweet potatoes, peeled and diced small
1 - 28 oz can crushed tomatoes
1 tablespoon tomato paste
2 1/2 cups beef stock
1 tablespoon paprika
1 tablespoon granulated garlic
2 teaspoons chili powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon kosher salt
1 tablespoon hot sauce
2 tablespoons lime juice
Chop onions and bell pepper. Place a large pot or Dutch oven over medium heat.
Throw your meat, onions, and bell pepper into the pot on the stove. Using a spatula or wooden spoon break up the meat as it browns into small pieces.
Once the meat is browned and the onions are soft, drain fat if needed.
Add crushed tomatoes, tomato paste, beef stock, and all spices except hot sauce and lime juice. Stir well. Add peeled and diced sweet potatoes. Bring to a boil and then reduce to simmer. Simmer for 45 minutes or until sweet potatoes are fork tender.
Add hot sauce and lime juice. Taste. Adjust seasonings as needed.
Enjoy a healthy and satisfying dinner!
