It has been a very dreich day here, so between catching up with Mad Men and Game of Thrones, I have been busy in the kitchen. Possibly inspired by Masterchef I decided on the Pork Cheeks recipe by Omar Allibhoy, Head Chef at El Pirata de Tapas and protégé of El Bulli’s Ferran Adria. I modified his accompaniment and decided on a kale, potato and celeriac mash, served with carrots and peas. This dish takes a fair amount of preparation and a long, slow cooking time. This is possibly one of the best dishes I have ever cooked. It was well worth the time and effort as the Pork Cheeks were delicious and just melted in the mouth.
