Oooey goooey lemon curdy...

This was todays offering: lemon cupcakes filled with lemon curd. They're byootiful. I could have used the pretty shot of it before I mashed it into bits but this shows it so much better. :)

Won't write much as it's past midnight and I'm exhausted but glad to be trying different methods and recipes. It was the first time I'd used the 'cupcake corer' that I bought on Sunday that makes a little hole in the cupcake to fill it with stuff. Fairly sure the next stop is going to be peanut butter and jam cupcakes but we shall see.

These lemon ones were at the request of my mum who's going back on the diet on Monday. :)
