Pan Haggerty

The weather has been cold and rainy all day so I just stayed at home.  Did some washing and ironing and sorted out some old clothes to put in a charity bag. 

Heard from Neil.  He is back at work today after a fortnights holiday.  had a 12 hour shift.  Feeling a bit sore after playing rugby yesterday but at least his team won the game.  He had some good news.  He found out that " the checks " had been completed satisfactorily and he and his girlfriend Rachael can move into their new flat next weekend.  Rachael has been living at Neils place for a month or so but its shared with 3 other lads so they wanted somewhere of their own.  I have seen the details online and their new rented place is lovely.  Very modern and not far from where they are now so their travel to work won't need to change.

So as I haven't been anywhere its a bit of an emergency blip today - my tea.  Its Pan Haggerty.   ( Slimming World version). I used potatoes, onion, ham and a beaten egg. Its the first time I have made it and it was very tasty - and syn free. Its based on an old traditional Northumbrian dish which comprises of potatoes, onions and cheese baked in a baking dish.  There is a Sunderland version called Panackelty which also consists of meat   - mainly corned beef - and potatoes and onions left to bake throughout the day in an oven pot on low heat. The dish exists in a number of local variations that differ in name, meat and vegetable content. Around the Humber estuary a version is known as pan aggie and consists of layers of bacon, corned beef and onions topped with either sliced or mashed potatoes.
