The Christmas Pav

A really lovely family day. Up at my usual time (with the sun) and prepared the carrots for midday dinner, and then helped S with a salmon and lemon topping to go on cucumber, and later on crackers or bread. We then went to spend the morning with C and her boys, joined by J. It was a lovely morning with the boys being keen to see the responses of the adults to the choices they had made for presents. We were all taken with how much attention they had paid to what are our interests and likes.
Later, the daughters, S and I enjoyed a real Christmas spread. Sad that the boys were away, and that the tsukens are in the Blue Mountains. The quality of S' cooking went some way to modifying that gap. The dessert was one of the superb pieces.
S cooked the pavlova last night, and today produced the topping (helped by J. The recipe was provided by Nadia Lim, and this was a "Brown sugar pavlova with barberries, salted caramel and toasted coconut". The cream was whipped with cream cheese making the whole affair very rich and tasty as.
